Today we have Sangita Rustogi, who has started her own baking venture called ‘Bakers Street’. This is her baking story and one of her favourite recipes; the Eggless Chocolate Cake. In her own words:
I am an interior designer, born and brought up in Delhi. As I’m from an architect family, creativity runs in my blood. My baking journey started during my schooling, in Sardar Patel Vidyalaya. Then, my dear friend Meenakshi Ranga introduced me to this lovely group, Bread bakers, in 2016. I attended a few live sessions conducted by Renu ma’am, and learnt so much. She is an amazing Guru and a wonderful human being. Her recipes are very easy to follow and practical. Initially, my breads were quite dense, but through practice, I managed to perfect them. Renu ma’am was always there when we were stuck- just a phone call away.
Our bread bakers group is always ready to answer your queries, motivate you and make you feel like a star by making your bake the group DP. One feels so proud and on top of the world. I have learnt so many things from this group whether its baking, cooking or desserts.
My friends and family relish the cakes, pizzas, stuffed breads, and pies that I bake. They were amazed when they learnt that I’d baked them all from scratch.
During lockdown, I started baking cakes with different types of frosting, after watching multiple videos and online live tutorials. I recently started using different types of flours, seeds and herbs in my bakes to make them healthier. I am currently using the Morphy Richards 40 ltrs OTG. I knead the dough with hands- it turns out better that way! I would love to learn how to bake sourdough breads, bao buns and macarons.
I also introduced a few of my friends to this lovely group- Mamta Jain, Nisha Tazir, Vineeta Rustogi, Niti Gupta and Meenakshi Vasan.
I usually bake twice a week- from buns, stuffed breads and kulchas, to pizzas and cinnamon buns.
My children encouraged me to start my own venture, Baker Street. My friends too have motivated me and appreciated me throughout my journey. I am truly blessed to have Renu ma’am, my family and friends in my life. Now, I have become a home baker from a home maker.
I use Angel yeast for all my breads and buns. Here, I am sharing the recipe of eggless chocolate cake
Recipe: Eggless Chocolate Cake
- All purpose flour – 1¼ cups
- Curd – 1 cup
- Oil – ½ cup + 2 tbsp
- Baking Powder – ½ tsp
- Baking Soda – 1 tsp
- Cocoa Powder – ¼ cup
- Vanilla essence – few drops
- Powdered sugar – ¾ cups
1. Sieve together flour,cocoa powder, baking powder and baking soda.
2. In pan, mix together curd, sugar and oil till the sugar is dissolved.
3. Gradually add flour to the curd mixture and beat well till smooth.
4. Add vanilla essence and mix.
5. Pour in a greased and dusted 8″ cake tin and bake in an oven at 160°C for 40 minutes or till done.
